Why Raw Food?

The insistence on these foods may seem a bit unusual to some people. But, once

cooking food destroys important nutrients - nutrients that could lead to the

Which Raw Foods?

some of the major cancer preventing substances and the vegetables and fruits that

* Carotenoids. These important substances come in several forms. Beta carotene is
found in carrots and sweet potatoes, lycopene is found in tomatoes, and lutien is
found in leafy greens like kale, spinach, mustard greens, and more. Some of these
carotenoids can also be changed into a form of vitamin A. Known as pro vitamin
acarotenoids, it can be found in cantaloupe, carrots, and sweet potatoes.
* Vitamin C. Also known as ascorbic acid, vitamin C is found in many fruits and
vegetables. Almost all citrus fruits, green peppers, cauliflower, broccoli, tomatoes,
melons, and even strawberries contain high amounts of vitamin C.
* Vitamin E. Vitamin E is found in broccoli, cilantro, turnip greens, avocados, spinach,
blueberries, olives, and nuts among other fresh foods.
* Folic Acid. Folic acid is important for women of childbearing age and as a cancer
preventing agent. It is found in leafy, green vegetables, lima beans, broccoli, beets,
and asparagus.
* Dietary Fiber. Known for good digestion, dietary fiber also acts to lower your risk of
cancer. You can find it in cereals, fruits, and vegetables. Apples, blackberries,
oranges, and broccoli are especially high in fiber.
* Selenium. This little known mineral is found naturally in some ground soils. Eating
this food grown in soil containing this mineral is said to prevent cancer. An example is
garlic grown in soil that has a high density of selenium.

Eating this food is the best way to get the most minerals and vitamins from your
food. Start a raw food, cancer preventative diet today by adding raw foods to your
