Unlike processed sugars, eating honey raises your blood sugar level only slightly. The
controlled rise of insulin causes the amino acid tryptophan (which is also present in
honey) to enter our brain, where tryptophan is then converted into serotonin, a
hormone which promotes relaxation. And in darkness, serotonin is converted into
melatonin, a well-known cure for sleeping disorders. The Hibernation Diet also
