Recipes: Vitality Salad & Salad Dressing

Vitality Salad:
Servings: 3-4
In a large bowl add the following ingredients:
4 handfuls chopped lettuce (see options)
1 handful chopped fresh spinach (or baby spinach)
2/3 cup fresh herbs (see options)
1 red bell pepper, thinly sliced
2 large carrots thinly sliced
1 green onion (including tops) thinly sliced
1 large tomato cut in pieces
1 cup fresh bean sprouts (optional)
Options:
Lettuce:
Romaine
Arugula
Butterhead
Watercress
Loose-leaf
Fresh Herbs:
Parsley
Basil
Mint
Rosemary
Sage
Thyme
Marjoram
Vitality Salad Dressing:
Makes 10 servings
In a blender or food processor add the following ingredients:
1/4 cup pine nuts (you can use sesame seeds or sunflower seeds instead)
1 clove garlic
2 tbsp fresh onion, chopped
3 cups fresh basil leaves (loosely packed)
1/4 cup lemon juice
1/4 cup lime juice
1/4 cup brewed and cooled green rooibos tea
1 tbsp powdered green rooibos tea (or green powder of choice)
1 tbsp kelp powder
1/4 cup cold-pressed flaxseed oil
1/4 cup coconut oil
1/4 cup olive oil
1/2 tsp. sea salt
Blend ingredients until smooth. Add more sea salt to taste (if necessary). Keep
refrigerated. Shake or stir well before using. Use within 1 week.
Notes:
To make powder out of dried leaves, you can use a coffee grinder and/or a
mortar and pestle.
